One thing I love to do at Christmas time is to make candy. I learned from the best cooks in the world, Grandma Beaumont and Grandma Baldwin. I have fond memories of watching mom stir fudge and eating Grandma Beaumonts coconut brittle. Mom used to make pecan crunch. This is one of my favorites this year and so easy to make.
Pecan Crunch
1 cup sugar + 2 T.
2 T. light Karo Syrup
1/4 C. water
1 square of real butter + 2 T.
1 1/2 T. white vinegar (weird huh)
1/4 teas. salt
1 1/2 cups pecans
Mix all but pecans in a heavy pan and cook stirring constantly until it changes colors and barely starts to smoke. Add the pecans and stir to coat. Pour on a buttered cookie sheet.
